endive, cucumber, avocado, soft white cheese, olive oil, garlic and ginger

Another simple recipe that will delight your tastebuds and is well rounded in the nutrition department!

This makes a whole meal.

Ingredients

  • 1 Belgian endive chop it up
  • 1/2 large cucumber peeled, dice into small pieces
  • 1/2 ripe soft avocado cut into small pieces
  • small ball of fresh mozzarella cheese or equal amount of another soft white cheese

Dressing

  • 1 clove fresh garlic pressed or minced
  • 1/2 tsp of fresh ginger peel & grate
  • 1 tablespoon extra-virgin olive oil and balsamic vinegar to taste
  • salt & black pepper to taste

Directions

Wash, peel and chop up the first four ingredients and toss them together in a medium-sized bowl. In a separate cup or container mix together the ginger, garlic with the olive oil and balsamic vinegar and shake or stir well. Pour on top of the salad.
