Melon, cheese, avocado, onion, olive oil, capers, salt, pepper and oregano – that’s all you need for this delicious salad!

The onion and salt complement and enhance this salad!

This delicious salad is a hearty meal for one person or as an appetizer for 2 people. Takes approximately 10-15 minutes to prepare

Ingredients

  • 1/2 cantaloupe or 1/4 of a honeydew melon
  • 1 avocado
  • 1 small to medium red onion
  • 200 grams/7 ounces mozzarella or similar soft white cheese
  • pinch of oregano
  • salt and pepper to taste
  • 1 tablespoon olive oil

Optional:

Add capers instead of salt or some green olives.

Directions

  1. Clean out the seeds and remove the peel of the melon and slice it into small pieces.
  2. Cut the avocado in half, remove the seed. Then using a tablespoon scoop out the soft fruit and slice it into small pieces.
  3. Clean and cut the red onion.
  4. Cut the cheese into small cubes
  5. Place all the ingredients in a bowl.
  6. Season with oregano, salt & pepper
  7. Add olive oil
  8. Toss and serve
