You can use either greek or plain yoghurt in this recipe. Choose based on your desired consistency.
Serve with chips or use it as a dressing on salad or on sandwichs
Ingredients
- 1 cup plain Greek yogurt
- 1 tablespoon extra-virgin olive oil
- 2 teaspoons chopped green onion (scallions)
- 1 large cucumber diced, chopped or blended – your preference
- 1 clove fresh garlic pressed or minced OR 1/2-1 small teaspoon already diced and chopped garlic (you can purchase it chopped in jars)
Directions
Mix it all up in a bowl and refrigerate for approximately 1 hour (if you’re not in a hurry) to allow the ingredients to permeate throughout. It can also be served immediately – it’s up to you 🙂 Serve with a baguette or with some tortilla chips for a quick meal. You can also add it on top of veggies in a wrap, etc.
