All of the recipes included here rely heavily on ingredients made from coconuts including: coconut sugar, coconut oil, coconut flour and shredded coconut! Coconut oil has a melting point of aorund 25C or 78F, so you'll find it at the store as a solid sold in jars.

Doodh Peda, a classic Indian dessert turned vegan!

Doodh peda recipe without the milk!

1 cup soaked Cashews (soaked overnight)
3/4 cup Coconut flour
2 tbsp Coconut Sugar
2 tsp Cardamom pwd
2- 3 tsp Rose Water
1 tsp Saffron pwd

Blend in the food processor & form into balls. Makes 4 servings.

Tahini Balls Recipe

1 cup tahini
1 cup date syrup
1 cup raw carob powder or raw cacao powder
Raw shredded unsweetened coconut

Mix first 3 ingredients in the bowl, form into balls. Roll the balls into raw shredded coconut. Chill & enjoy. Makes 2-4 servings.

Vegan Chocolate Mousse Recipe

Avocado Chocolate Mousse

2 avocados
½ cup or less coconut nectar or maple syrup or raw honey
2 tsp vanilla extract
3/4 - 1 cup raw cocoa powder
Small pinch of raw unheated salt
1tbsp coconut oil

Blend all the ingredients in a food processor until you can no longer see the color green from the avocado. Makes 4 servings.

Maca Bar Recipe

One for you and one for me and one for anyone you want to nourish!

1/2 cup raw cacao powder
1/4 cup maca powder
1 cup coconut sugar
1/4 cup raw coconut oil, melted
Combine all the ingredients in a large bowl and mix well. Smooth fudge into a baking dish lined with parchment paper. Score the top to denote serving size, then refrigerate for 1 hour. Cut with a sharpe knife and serve.
