Who loves dip? Here’s a simple easy recipe that you can enjoy or make and bring to a party. It’s our Perfect Portobello Mushroom Dip.
Easy Recipe: Portobello Mushroom Dip
makes 2.5 cups of dip
Ingredients
- 3 tablespoons olive oil
- 1 pound or 450 grams portobello mushrooms
- garlic powder (not garlic salt) to taste
- juice of one lemon
- 1 cup sour cream
- 3 scallions white part only
- 6 ounces or 170 grams of goat’s milk cheese – chevre
Other items:
Chips tortilla or potato
Pita bread
Directions
- Chop mushrooms and mince the scallions.
- Heat olive oil in a pan. Add mushrooms and saute until the mushrooms are soft. Stir in lemon juice. Remove from heat and allow the mixture to cool. Drain excess liquid.
- Combine sour cream, diced scallions and the goat cheese in a food processsor bowl and process until smooth. Or if you don’t have a food processor mix thoroughly by hand.
- In a large bowl mix the two preparations together, stirring well. Serve in a bowl surrounded by your favorite chips or warmed pita bread.
