All the ingredients you’ll need to make this perfect portobello mushroom dip!

Easy Recipe: Portobello Mushroom Dip

makes 2.5 cups of dip

Ingredients

  • 3 tablespoons olive oil
  • 1 pound or 450 grams portobello mushrooms
  • garlic powder (not garlic salt) to taste
  • juice of one lemon
  • 1 cup sour cream
  • 3 scallions white part only
  • 6 ounces or 170 grams of goat’s milk cheese – chevre

Other items:

Chips tortilla or potato

Pita bread

Directions

  1. Chop mushrooms and mince the scallions.
  2. Heat olive oil in a pan. Add mushrooms and saute until the mushrooms are soft. Stir in lemon juice. Remove from heat and allow the mixture to cool. Drain excess liquid.
  3. Combine sour cream, diced scallions and the goat cheese in a food processsor bowl and process until smooth. Or if you don’t have a food processor mix thoroughly by hand.
  4. In a large bowl mix the two preparations together, stirring well. Serve in a bowl surrounded by your favorite chips or warmed pita bread.
