Here’s what you’ll need to make this delicious zucchini nut bread recipe:
- 3 eggs
- 2 cups/256 grams sugar
- 1 cup/237 mls olive oil
- 2 cups/300 grams zucchini
- 2 tsp. vanilla
- 3 cups/360 grams flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup or 175-225 grams berries OR pineapple fruit
- 1 cup 125 g chopped walnuts
Directions
- Sift flour, baking powder, salt and baking soda together.
- Add eggs, sugar, oil and vanilla in that order.
- Mix well.
- Blend or chop zucchini.
- Fold in zucchini, fruit and nuts.
- Makes either 2 small loaves or 1 larger loaf.
- Grease pans.
- Pour batter into the greased loaf pan(s).
- Bake for approximately one hour at 325F/180C degrees.
- Note: if you use blended zucchini you may have to bake for a few minutes longer. Test the center with a toothpick. If it comes out clean, it’s done!
