Ingredients
- 1 Belgian endive chop it up
- 1/2 large cucumber peeled, dice into small pieces
- 1/2 ripe soft avocado cut into small pieces
- small ball of fresh mozzarella cheese or equal amount of another soft white cheese
Dressing
- 1 clove fresh garlic pressed or minced
- 1/2 tsp of fresh ginger peel & grate
- 1 tablespoon extra-virgin olive oil and balsamic vinegar to taste
- salt & black pepper to taste
Directions
Wash, peel and chop up the first four ingredients and toss them together in a medium-sized bowl. In a separate cup or container mix together the ginger, garlic with the olive oil and balsamic vinegar and shake or stir well. Pour on top of the salad.
