Great for breakfast or dessert! Make loaves or muffins with this delicious zucchini nut bread recipe. You can also freeze muffins too!

Ingredients

Here’s what you’ll need to make this delicious zucchini nut bread recipe:

  • 3 eggs 
  • 2 cups/256 grams sugar
  • 1  cup/237 mls olive oil
  • 2 cups/300 grams zucchini
  • 2 tsp. vanilla
  • 3 cups/360 grams flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup or 175-225 grams berries OR pineapple fruit
  • 1 cup 125 g chopped walnuts

Directions

  1. Sift flour, baking powder, salt and baking soda together.
  2. Add eggs, sugar, oil and vanilla in that order.
  3. Mix well.
  4. Blend or chop zucchini.
  5. Fold in zucchini, fruit and nuts.
  6. Makes either 2 small loaves or 1 larger loaf.
  7. Grease pans.
  8. Pour batter into the greased loaf pan(s).
  9. Bake for approximately one hour at 325F/180C degrees. 
  10. Note: if you use blended zucchini you may have to bake for a few minutes longer. Test the center with a toothpick. If it comes out clean, it’s done!
